How does practice work? It appears its sometimes possible to use during the regular season and other times impossible. It's very confusing.

You can only practice during Spring Training and during the off season for a period of time. Other than that you can only Practice Alone.

No, because somtimes with my pitcher I was able to practice between games.

During long breaks (or during breaks between getting called up/sent down) in the season you'll have formal practices with the team. These practices are cumulative to the practices you've already done (exp towards the next level of practice).
