In the championship game with the Galaxy Sharks. Can you go into extra innings or will the game be a do-over? And what will happen if you use all of your pitchers in the game? (Like use a pitcher for one inning then replace him with another one)

i think there are no extra innings, its a tie and you have a rematch(that you dont play in)
I think you will be stuck with the last pitcher you used.

Yeah, I don't like that the game ends a tie and the computer will decide who wins.

Unless we win, it becomes an instant "exit and reload".
