I CANNOT hit Tim Wakefield for the life of me.

Just sit knuckleball. If the throws anything else lay off of it. Even if you've got 2 strikes on you, he throws slow enough that you ought to be able to fight off anything else.

The only exception I make to this, is that if your player has low contact (maybe E minus-ish), then you may want to sit fastball if you aren't confident enough in hitting the knuckler.

Yeah, I kept facing him in Life with my Blue Jays catcher that has 7 contact. So maybe that was my problem.

Bronson Arroyo is great to pitch with if you want to rack up Ks. Fastball up and in, Curve down and in, the down and away curve, and you're golden.

I find that a sinker of at least a 2 is a really good strikeout pitch. Slow like a change, and moves vertically and horizontally like a curve, but to the opposite side.

Re Tim Wakefield, i take the opposite approach of the prior poster - i wont swing at a knuckler until i have 2 strikes. I get a few walks and a lot of high counts, so even if im not hitting him well, he usually has to be pulled by the 4th inning.
